I love the theme of Spock being different from all of Kirk's other conquests, and that there's something about their attraction that drives each of them beyond their normal behaviors. This line was especially nice: Might be worth it, almost, to see that, but it might also make this stop, McCoy's knowledge a hideous invasion on this unspoken little ritual.
